Reprinted in 1985 by the Iowa Chapter of The Victorian Society of America, this cookbook has become a classic, both for it's content and it's philosophy regarding the importance of good food, good nutrition and the fundamental worth of a woman in her roles as mother, homemaker, chef and household manager. The author organized and headed the first Department of Domestic Economy from 1875-1883 at Iowa State Agricultural College, where her husband was the first president and had previously approved coeducation. She was an instructor of Domestic Economy, English, and Elocution from 1875 to 1893. She was very-well educated at cooking and domestic economy both in "the East" and in Great Britain as part of her preparation for her teaching load.
